NIC Wild Game Feast to feature wild game menu

Attendees at the North Idaho College Alumni Association's sixth annual Wild Game Feast Saturday, Jan. 15 will enjoy wild game delicacies rarely available to the casual diner. This year's event features a four-course meal created by Coeur d'Alene Inn Chef Gene Tillman inspired by the Lewis and Clark Cookbook/Historic Recipes from the Corps of Discovery and Jefferson's America produced by Leslie Mansfield. “This year marks the 200th anniversary of Lewis and Clark's expedition, so it seemed fitting to put together a menu inspired by their journey,” said NIC Alumni Relations Coordinator Sara Fladeland. “And it's a culinary experience that won't disappoint. The Wild Game Feast really is unlike anything else around.” The menu features appetizers including smoked salmon pitas with cream cheese; rolled buffalo tri tip with marmalade horseradish sauce; pheasant pate on garlic baguettes; elk sausage and buffalo meatballs with huckleberry barbecue sauce; wild boar, duck and pheasant raviolis with pesto cream; wild mushroom Marsala with fire roasted tomato sauces and a Northwest cheese and fruit display. A firecracker alligator Caesar salad will be served followed by the main course of braised venison shank with fennel and onions, Yukon gold garlic mashed potatoes and fire roasted mirepoix vegetables. Dessert features a cranberry orange zest bread pudding with cinnamon sauce. Fine Wine Manager of Odom Northwest Dean Opsal will be a featured speaker, suggesting wine selections that complement the wild game on the menu. Beth Paragamian, wildlife education specialist for the Idaho Fish and Game Department, Idaho Panhandle National Forest and Bureau of Land Management, will help provide the atmosphere of the event with displays of taxidermy animals in settings resembling their natural habitat. The event will also include a silent auction and classic guitar music by a group of NIC music students and alums. Works by local wildlife artist and NIC alumna Dianne Munkittrick will be on display as well as a historic clothing display highlighting the Lewis and Clark theme. Appetizers will be served at 6 p.m. followed by dinner at 7 p.m. at the Coeur d'Alene Inn, located at 414 W. Appleway. All proceeds benefit the NIC Alumni Association and scholarships for NIC students. Tickets are $50 per person or $45 for NIC Alumni Association members.
