NIC launches culinary apprenticeship program

North Idaho College is accepting applications for its new Culinary Arts Sous Chef Apprenticeship, a selective program designed to meet local labor needs and open doors for traditionally underserved populations, including young adults, veterans and those looking for a career change.
The apprenticeship offers classroom instruction, paid on-the-job training and mentorship. In six semesters, apprentices will complete academic coursework and lab work at NIC while also logging 4,000 hours of paid employment at local, approved full-service restaurants.
“This earn-while-you-learn model is more than just a training program; it’s a pipeline for upward mobility, professional growth and community strength,” NIC Culinary Instructor Hillary Ginepra said. “This apprenticeship is tailored for individuals aiming to advance their careers through education while maintaining full-time employment."
Upon completion of the program, students will earn an associate of applied science degree and be eligible to take the national American Culinary Federation exam to earn a Certified Sous Chef credential.
“This program is a win for our community and our economy,” NIC Dean of Instruction Workforce Education Vicki Isakson said. “It opens doors for individuals who’ve been left out of traditional career paths, while also helping local businesses thrive by building a skilled, reliable workforce. It’s education with purpose and impact.”
Ginepra said the apprenticeship addresses one of the most pressing issues facing the foodservice industry — finding qualified, work-ready employees. By partnering with local restaurants, schools, health care facilities and other institutions, the program helps fill essential roles while reducing turnover.
Applicants must have at least six months of food service experience and a GED or high school diploma. The application process includes submitting two letters of recommendation and a short essay outlining career goals and commitment to the sponsor site.
